Cánh gà rửa với nước pha muối, sau đó xả qua nước lạnh thật sạch để ráo. Sả cắt sợi dài nhỏ. Lá chanh cắt nhuyễn. Ớt tỏi băm nhỏ. Hành lá cắt nhỏ.
Cho bột bắp vào bao nylon, 1/4 muỗng cà phê muối và tiêu, trộn đều. Sau đó cho hết cánh gà vào xóc đều.
Bắc chảo dầu lên bếp, dầu hơi nóng thì cho cánh gà vào chiên với lửa vừa, khi cánh gà vàng giòn gắp ra đĩa có lót giấy thấm dầu.
Sau đó cho sả và lá chanh vào chiên vàng thơm. Cũng vớt ra cùng đĩa với cánh gà.
Bắc 1 chảo khác lên bếp, cho vào 1 muỗng canh dầu, dầu nóng cho tỏi, hành lá, ớt vào xào thơm, sau đó cho bột chiên xù, 1/4 muỗng cà phê muối, tiêu vào xào 4-5 phút.
Khi thấy bột chiên xù có màu vàng thì đổ hết cánh gà và sả, lá chanh vào đảo đều là tắt bếp.
Cho cánh gà rang muối ra đĩa, sả chiên vàng trang trí phía trên. Món ăn này dùng với cơm rất ngon.
