Làm thạch rau câu bột bắp: Hòa tan 1 chén bột bắp với 1 chén nước lọc trong một cốc, dùng đũa khuấy đều theo chiều kim đồng hồ, tránh tạo nhiều bọt. Để ít phút cho nước bột được nghỉ.
Đổ 3 chén nước lọc vào chảo chống dính sâu lòng, thêm ít muối, đun sôi. Dùng đũa khuấy cốc nước bột bắp rồi rưới từ từ vào chảo nước, vừa rưới vừa dùng đũa khuấy đều. Đun lửa nhỏ vừa, khuấy cho đến khi hỗn hợp được trong và nặng tay thì tắt bếp. Đổ rau câu ra khuôn đựng và đợi đông lại.
Khi rau câu bột bắp đã đông lại thì cho ra khỏi khuôn, cắt thành những miếng nhỏ có kích thước tùy thích. Bày trí ra tô, thêm sữa tươi dâu, đá bào, rưới siro dâu vào nữa là có thể dùng.
Chè thạch bột bắp sữa tươi dâu có vị ngọt dịu, thơm hương dâu rất đặc trưng. Nếu thích nước chè được đặc sánh thì bạn có thể đun nóng sữa tươi dâu cùng ít bột bắp cho có độ sệt như ý là được.
