Sả bóc lớp vỏ ngoài rửa sạch cùng ớt đỏ rồi thái mỏng. Để làm món ngan xào sả ớt ngon, trước hết nên chọn những con ngan nuôi lâu năm, sau khi đã lọc thịt ngan bạn đem thui bằng rơm, phần da sẽ giòn khi xào. Sau đó thái mỏng thịt ngan. Ướp thịt ngan với 1 muỗng cà phê hạt nêm, 1/2 muỗng cà phê bột canh, 1 muỗng cà phê dầu hào, 1 ít hành tím băm nhỏ. Sau đó trộn đều để khoảng 30 phút cho thịt ngan ngấm gia vị.
Đặt chảo lên bếp phi thơm hành băm với chút dầu ăn rồi cho thịt ngan vào xào săn. Cho thịt ngan ra đĩa để riêng.
Vẫn chảo đó cho sả, ớt vào xào (chú ý xào phần sả trước khoảng 1 phút rồi mới cho ớt vào). Tiếp đến bạn cho thịt ngan vào đảo đều, nêm 1 muỗng canh nước mắm, 2 muỗng cà phê đường, 1 muỗng cà phê hạt nêm, trộn đều.
Cho thịt ngan xào ra đĩa, rắc thêm mè trắng rang lên trên và dùng nóng với cơm.
